The weather is getting warm which calls for… light and refreshingness! This is the perfect salad alternative to take to any cookout, and it’s very simple to whip up.
Ingredients:
-1 part quinoa
-1 part celery
-1 part tomato
-1 part cucumber
-1 part onion
-1 part mango/grapes
-a little drizzle of balsamic vinegar & oil or your favorite light vinaigrette
-salt & pepper to taste
Dice all ingredients very small and mix everything together! If you want your salad to be cool, cook the quinoa ahead of time and store it in the refrigerator. Enjoy!
